Easy Sweet Chilli Cheese Muffins
When you’re looking for something easy, breezy and cheesy, these delicious little muffins are it. (Life without cheese, are there any words?) They will go alongside soup, in your kid’s lunchbox or as a midmorning snack. They can be frozen as well. Having a supply in the freezer ready to reheat at a moment’s notice is a must in our household. They’re so easy, dads, you should make them with your kids. Or, better still, have your kids make ‘em for you! Dressed up or dressed down, these cheesy morsels are best devoured while still warm, preferably with a dollop of butter. You’ll thank me as the butter dribbles and disappears lovingly into the knife-made crevasse. Hungry?
6 oz. old (or extra old) Cheddar, grated
1 ½ cup all-purpose flour
1 ½ teaspoon baking powder
1 teaspoon salt
¼ - ½ teaspoon garlic powder
1 cup milk (2% or whole)
2 tablespoons (Thai) sweet chilli sauce
1 oz. Parmesan cheese, grated
1. Preheat oven to 400 degrees Fahrenheit [205 degrees Celsius]. Put the cheddar in a large bowl along with the flour, baking powder, garlic, and salt, and mix them all together with a wooden spoon.
2. Pour milk into a measuring cup. Stir in the chilli sauce, and then beat the egg into the liquid mixture until all three ingredients are thoroughly combined.
3. Make a hole with the spoon in the dry ingredients and pour in the liquid mixture. Fold everything together until just mixed. Grease a muffin tray with either canola spray or butter to stop the muffins from sticking.
4. Use an ice-cream scoop to fill the muffin tray ¾ full, and sprinkle Parmesan cheese on top of each muffin for an extra cheese kick. Place muffin tray in oven and cook for 15 minutes.
Mini cheese muffins. Follow the recipe, but use 2 mini muffin trays and with two teaspoons, spoon the mixture to fill each plot ¾ full. Cook at same temperature for 12 minutes. Once the muffins have cooled for about 2-4 minutes, remove from tray carefully and make a deep slash from the top to 1/3 from the bottom. You can then insert a slice of brie and half a walnut or cherry tomato; a smear of cream cheese and smoked salmon…you be the creator.
Chives muffins. Instead of using sweet chilli sauce and garlic, add 1 teaspoon of mustard to the liquid ingredients and 1 tablespoon of chopped chives to the dry ingredients. Follow the recipe as above.
